Butternut Squash Muffins

Ingredients

  • 3 cups old fashioned oats
  • 4 Tablespoons cinnamon (or any combination with cloves, pumpkin pie spice or chai seasoning )
  • 1-1/2 teaspoons baking soda
  • 1/4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 2 eggs
  • 1 cup unsweetened almond milk
  • 1/2 cup honey or maple syrup
  • 3 tablespoons oil
  • 1 tablespoon vanilla
  • 1 cup mashed butternut squash or pumpkin

Preheat oven to 350. Add oats to food processor and process on high until it looks like flour. Add seasoning , baking soda and powder and mix. Add wet ingredients and mix again. Now put the butternut squash and nuts in, mix again, avoid over mixing. Pour into greased or lined muffin cups, fill almost to the top. Bake 20-25 minutes, depends on your oven.
