Zucchini Lasagna

  • 1 1/2 large zucchinis
  • cooking spray or olive oil
  • 1 pound ground turkey
  • 1 pound sausage of choice
  • 1 cup spaghetti sauce of choice
  • 8 ounce ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • 1/4 grated Parmesan cheese

Preheat oven to 350. Wash zucchini and slice into thin slices, lengthwise. Spray cookie sheet with cooking spray and arrange zucchini in single layer on the sheets. Bake for 10-15 minutes to dry out the zucchini, there will be some slight browning.

Brown turkey burger and sausage in skillet. Add spaghetti sauce. Get creative here and make the sauce your own way.

Put ricotta into a mixing bowl. Add egg and one cup of mozzerella, stir.

Arrange a layer of zucchini in the bottom of a greased 13×9 baking dish. Cover with half of the meat sauce, another layer of zucchini, spread ricotta followed by another layer of zucchini. Cover with remaining meat sauce and bake uncovered for 30 minutes.

Top with remaining mozzarella and the parmesan cheese and bake for 15 minutes or until golden brown.
