Endive Salad

  • Bunch of fresh endive or dandelion greens – large bowl
  • 6 hard boiled eggs, chopped
  • 1 pound turkey bacon
  • 1 lemon
  • 1/2 cup brown sugar or honey
  • 1/4 to 1/2 cup water

Cut turkey bacon into 1 inch pieces, fry until slightly crisp and drain, keep the drippings in the pan. Add to pan: the juice of one lemon, brown sugar and water to taste.

Wash endive or dandelion well and drain. cut into bite sized pieces and put into large bowl, top with eggs and bacon in layers. Pour sauce over it and serve immediately.

We eat this for our main course and serve a side with it, baked potatoes go well as a side.
