- 12 Chicken drumsticks
- 1/4 cup butter
- 1/2 cup finely chopped onions
- Garlic – any kind
- Pineapple juice from a can of pineapple
- 1/4 cup soy sauce
- Honey to taste , if necessary
Arrange Chicken drums in baking pan. Melt butter in sauce pan, add minced onlon and saute until clear. Add garlic and saute another minute and remove from heat. Add remaining ingredients and pour over chicken. Marinate in refrigerator for at least one hour. Turn drums and bake in oven at 350 for 30 minutes. Turn drums and bake another 30 minutes.
Skim fat from remaining sauce and add 1 cup chicken broth. Thicken with cornstarch and add pineapple pieces. Serve over rice. Garnish chicken with fresh herbs and pineapple pieces.
